Tasting Notes

Colour

The colour is deep inky black / red through the core with deep purple and crimson tones on the rim. It’s opaque with long legs coating the glass.

Aroma

The bouquet is intense with spirity alcohol, cedar wood and earthy mushrooms immediately obvious. There is ripe blackcurrant richness and a lingering herbaceous, forest floor character. The aromas continue to grow as the wine opens up in the glass revealing lovely oak and leafy herbs.

Palate

The palate is velvety smooth on the front with luscious berry fruit and licorice spice. The flavours then explode with gripping tannins and firm acidity looming on the middle. Syrupy cassis, medicinal herbs and earthy characters swirl through the mouth giving a feeling of great weight and texture. The herbaceous flavours are supported by smoky oak and coffee grounds with a touch of vanilla and alcohol sweetness rounding out the finish. This is a powerful wine with lots to offer and very sophisticated structure.

Food Matching

This wine has plenty of flavour and substance. It’s ideally suited to slow cooked beef roast, Osso Bucco or goat with complex reduction sauces.

Cellaring Potential

Peter Jorgensen’s Premium wines are selected for their longevity and depth of character. This Grand Barossa Cabernet Sauvignon will stand the test of time and age for many years to come. It will evolve in bottle to develop chocolate and mocha flavours as the primary fruit flavours soften. This is a fine example of solid Barossa Cabernet from premium, old vines.

The “Premium” label is allocated to only the most outstanding wines. Peter hand selects truly premium, benchmark material with rich fruit intensity, complex flavours and structure combined with long term aging ability. All Premium wines are an expression of excellent vineyard management and winemaking. The resulting wines are extremely limited and are treated with minimal filtration and additives which result in great length and balance. They are wines that take time to evolve and are given extended cellar maturation to allow all elements to become integrated before bottling. The aging process will continue in bottle and each wine will develop a light crust over time. Please allow this wine to breathe for at least 60 minutes prior to consuming.
