The appearance is dark and opaque with inky red edges and thick viscous legs coating the side of the glass.
The initial bouquet is massively intense. On pouring the first glass the characters of smoked meats and delicious deli specialties fill the air. Behind the savoury oak is luscious dark berry fruit and fragrant olive tapenade. The overall balance is kept in check with subtle hints of dark chocolate and freshly roasted coffee grinds.
The intensity follows through to the palate with the savoury smokehouse flavours bursting onto the tongue ahead of ripe dark plum fruit and earthy herbs. The mid palate has plump juicy tannins which give a silky voluptuous texture. The mouth-feel builds with a dry earthiness leading to a long finish with deep herbal notes and warm chocolaty aftertaste.
This is a big wine with dominating flavours, so match it with richly flavoured dishes like beef Wellington baked in pastry with a creamy pate and mushroom sauce or a rare fillet mignon wrapped in smoky bacon.
This is a classic Barossa Shiraz. It will deliver outstanding drinking for over a decade if cellared well, however it doesn’t require cellaring to be eminently enjoyable. From release it offers an intense flavour experience which will develop and gain complexity as it matures in bottle.
We recommend decanting or splashing prior to consuming. To enhance the wines flavour allow at least 30 minutes breathing time.
